Callington Mill Distillery was founded by John Ibrahim. His short, passionate and intense love affair with Tasmanian whisky began when he met the godfather of Tasmanian whisky, Bill Lark.
John joined Bill on a trip to Scotland in 2016, where he gained firsthand experience in traditional whisky making. John’s eyes were opened to the passion, wonder and scale of Scottish single malt, and from that moment on he has devoted his entire life to all things whisky.
When he got home John began pursuing his Tasmanian single malt dream, based on a six-point plan.
1. The distillery had to be in a historic rural town
2. The distillery had to be aligned with a significant historical site
3. The distillery building had to become a landmark in its own right
4. The distillery had to be engineered and built in Tasmania
5. The distillery had to be as safe and energy efficient as possible, in line with world-best practices
6. The distillery had to have a world class integrated visitor experience
It’s early days, but that dream is starting to come to life. We can’t wait to share the rest of it with you.
